Roseneath Resident’s Herb Garden

Last year Rhonda March and children (Miki & Odeya) planted herbs in raised garden bed, the herb
garden has been a success growing beautiful fresh herbs.
It’s wonderful that the resident’s garden has become an opportunity for Roseneath Kitchen to cook with.
Recipe of the Month
Classic fluffy Australian corn fritters recipe

1 cup self-raising flour
2 eggs
1/3 cup milk
2 x 420g cans corn kernels, drained
2 tbsp chopped chives
100g fetta, crumbled
30g piece cold butter
1 small avocado, cut into wedges
30g baby rocket
2 tbsp Coles sweet chilli sauce, to serve
Step 1
Place flour into a large mixing bowl and make a well in the centre. Use a fork to whisk eggs
and milk in a jug and pour gradually into the flour,
stirring gently to combine. Fold in corn, chives and fetta. Don’t over-mix or the fritters will be tough.
Step 2
Wrap butter in a piece of paper towel. Heat a large frying pan over medium heat and
wipe with the butter to grease. Drop 1/4 cupful’s of mixture into the pan
(you’ll have to cook in batches). Cook for about 2-3 mins, until golden brown underneath, then turn and cook the other side.
Repeat with the butter and fritter mixture.
Step 3
Serve fritters with avocado, rocket and sweet chilli sauce.

Inverell Lunch

A group of resident’s went on an adventure to Inverell Park on Thursday the 16th of January 2025, they
had lunch and enjoyed a walk along the water. It was a lovely day in the sun for all that attended,
we look forward to more day outings for the residents.

On Wednesday 22nd of January 2025 Samsara and Mahleah joined a group of Roseneath Resident’s for
a stroll around the park in Glen Innes. Roseneath would like to show appreciation to all the children
that have joined us over the school holidays to spend time with Roseneath Resident’s, your presence brings smiles to their faces.
